Pineapple Fried Rice

It’s pineapple season and here is a simple and delicious pineapple fried rice recipe.

Ingredients

  1. Whole pineapple
  2. 250g protein of your choice (I am using shrimp here)
  3. Steamed brown rice 2 cups (left over brown rice)
  4. Greens of your choice (I used green pepper but can be substituted with frozen peas, corns, carrots, etc.)
  5. Minced garlic and green onion
  6. 5g of curry powder and 1 teaspoon of salt

Directions

Put 1 table spoon of cooking on a non-stick pan and heat it up with medium heat for 2 minutes.

Add minced garlic and saute to fragrant.

Stir fry the shrimp with salt for 2 minutes (till the color starting to turn).

Add in the brown rice, green pepper and continue to stir fry for another 2 minutes.

Add in some green onions and stir fry for another 30 seconds.

Lastly, add in some fresh sliced pineapple dice and sprinkle some nuts of your choice (for extra texture).

Since we are using fresh pineapple, it is always fun to use the pineapple shell as bowl when serve.
